cookies: Saucepan Oatmeal Cookies

2 C sugar
1/ C cocoa powder
1 Tbsp light corn syrup
1/2 C milk
1 stick margarine

2 C quick cook oatmeal
1/2 cup Jif peanut butter (creamy)
1 tsp real vanilla

In a heavy saucepan, combine the first 5 ingedients. Set to med-high-ish heat. No cover. Stir constantly until it reaches rolling boil and boil for 3-minutes.

Remove from heat, then add your oatmeal and peanut butter. Return to rolling boil for 1 1/2 minutes while stirring constantly, and remove from heat.

Let cool for 5 minutes and add vanilla By stirring in. Cool cookies to touch- no degrees of burn here. Hot ok but finger must be able to poke into cookies without profanity necessitating.

Lightly stir cookies til ‘dullness’ starts, then drop by tspful onto parchment or waxed paper. Let cool til they are dull and pull from sheet without sticking. Also allowed, butter a cookie pan and pour batch in, speading evwn. Lighly score and cut before completely set. Double batch to share.
